This Clairin was distilled from the boiled syrup of three local sugar cane varieties in Pignon, Haiti. It underwent extended natural fermentation with dunder before a single pot still distillation. A raw, smoky expression of Haiti’s cane tradition you will find notes of smoked herbs, liquorice, straw a hint of acidity and dusty red earth.
